Maryland Blue Crabs Questions
Our crabbers are based in Crisfield, Cambridge & Point Lookout in the Chesapeake Bay region of Maryland. Every morning around 4 AM they send the day’s catch to our headquarters in Rockville, MD where we sort and cook the Maryland Blue crabs.
During the off-season we offer either flash frozen Maryland Blue crabs or “Maryland-style” Blue Crabs from North Carolina, Florida, Texas, or Louisiana.
The peak season for Maryland Blue Crabs is from April to the end of November. The best time for Maryland crabs is during the fall months, September to mid-November, which is when the biggest, heaviest crabs are typically harvested.
In December, as the weather cools down, crabs from the Chesapeake Bay head towards the warmer waters. During this off-season, we offer either flash-frozen Maryland Blue Crabs or “Maryland-style” Blue Crabs from North Carolina and Louisiana.

For online ordering, we absolutely recommend getting steamed crabs over live. The issue with live crabs is that they are very vulnerable to changes in temperature and movement, and they tend to die during transit.
Normal mortality rates can be in excess of 15% or up to the entire order. To maintain a quality customer experience, we only ship pre steamed blue crabs.
Ask any Marylander and they’ll tell you there is only one way to cook a crab: that way is steaming. Boiling crabs tends to make the meat a bit more “mushy” and watery which is not ideal.
After grading and sorting the Maryland Blue crabs we steam them in large steaming pots with Cameron’s special seasoning blend. This seasoning is comparable to Old Bay or J.O. Spice.
Eat, reheat or refrigerate crabs immediately upon receipt. There is no appreciable loss of quality from reheating.
In order to reheat crab, place a steamer basket in a large pot with enough water to reach the bottom of the basket. Once the water is boiling, place the crabs inside, season and cover. Steam the crabs for five minutes or until the meat is hot throughout.
If you don’t have a steamer basket on hand you can also reheat the crabs in the oven for approximately 10 minutes at 375°F.
To eat hard shell crabs, cover your table with crab paper or newspaper and make sure you have plenty of paper towels on hand. Prepare some melted butter with lemon juice. Order some Maryland Blue Crabs online, dump them in the middle of the table and get crackin’.
- Twist off the legs and claws off the body. Discard the legs and put the claws aside for now.
- Pull off the apron, the flap located on the abdomen.
- Turn the crab over and pull upward on the shell from the back of the crab peeling it forward.
- Grab each side firmly and bend in the middle, breaking in half. Take each half and break those in half too.
- Pick the meat from each half. Pro tip: slide the extracted meat across the top shell to pick up some delicious seasoning.
- Crack the claws with a mallet and extract the meat.
A bushel of crabs refers to the wooden basket-like container that crabbers use to store crabs after they catch them. 1 bushel of crabs will typically contain 5.5 dozens of large crabs and 6-7 dozens of small-medium crabs.
#1 Male
The #1 Male crab, also known as a “Jimmy”, are typically the most sought after type of crab. They typically range from 5 ½ – 6 ¼ inches. They are easily identified by their blue claws and inverted t-shaped apron which resembles the Washington Monument.
Jumbo
Jumbo crabs are simply very large Jimmys. They typically range from 6 ¼ inches and up. These crabs are a rarity and therefore are not always available.
#2 Male
The #2 Male crab are smaller Jimmys. They are typically caught right after shedding their old shell and have not quite filled out their new bigger shell. They range from 5 – 5 ½ inches.
Female
The Females, also known as “Sook”, can be identified by the orange color on the tips of the claws or their dome shaped apron. They can range up to 6 inches.
